Cheesy Chicken Pasta Recipe

1 rotisserie chicken, deboned
1 package of spaghetti cooked according to the package
1 block (1 lb) of Velveeta cubed
1 can cream of mushroom soup
1 can Ro-Tel tomatoes with green chilies (I used dice tomatoes and then added a few splashes of Cayenne and Texas Pete)
¼ cup diced bell pepper
¼ cup diced onion
¼ cup diced celery
1 teaspoon garlic powder
½ cup chicken stock
½ cup cream (may use milk or half & half)
Salt and pepper to taste

1. Preheat oven at 375º
2. Cook pasta according to the package
3. Sauté the bell pepper, onion and celery in 1 tbsp butter till tender
4. While the pasta and veggies are cooking, debone chicken and cut Velveeta cheese block into cubes
5. In a large bowl, add the chicken, Velveeta, cream of mushroom soup, garlic powder, tomatoes, chicken stock, cream, salt, and pepper (and cayenne and Texas Pete if you did not use Rotel)
6. Strain pasta when it’s finished and pour over the chicken mixture
7. Add the sautéed veggies to the mixture and stir till incorporated and the cheese is mostly melted
8. Put pasta mixture into a 9x13 pan (sprayed with non-stick cooking spray), top with shredded cheese (optional), and bake in a preheated oven at 375º for 20 minutes, or until the top gets golden brown and crispy.
