3 eggs
1 C oil
2 C sugar
3 t vanilla
4 C zucchini, grated
3 t cinnamon
1 t baking soda
1 t salt
1 t baking powder
½ C coconut
½ C chopped nuts
3 C flour

Directions:
Directions:
Beat together the eggs, oil, sugar, and vanilla, making sure all ingredients are well blended. Add the zucchini. Add the flour, cinnamon, soda, salt and baking powder; stir well. Add the nuts and coconut. Pour into well greased and floured loaf pans. Bake at 350 º for 1 hour.
