2 lb veal scaloppini
½ C butter
3 T chopped fresh chives
1 clove garlic, finely minced or mashed
¼ C fresh chopped parsley
2 T butter
2 T olive oil

Directions:
Directions:
Mash ½ C butter until soft. Stir in chopped chives and garlic. Form into a log; roll in chopped parsley and wrap. Chill.
Sprinkle veal slices with salt and pepper. Coat lightly with flour. Heat remaining butter and oil in large skillet. Brown veal quickly, 2-3 minutes per side.
Unwrap butter log. Cut into 12 slices. Place 2 slices on each slice of veal. Serve with rice.
