TENDERLOIN

Tenderloin Roast---2 lbs. or more
¼ C Kitchen Bouquet
¼ C Kikkoman Teriyaki Sauce



Marinade roast in mixture of above ingredients for 3-4 hours (or more)
Place in roasting pan and bake at 425° for 45 minutes. Check at 40 min. I have found that 45 minutes is Medium Rare end to end.

BERNAISE SAUCE

¼ C white wine vinegar
2T tarragon vinegar
2 t chopped fresh tarragon (or 1t dried)
1 T chopped shallot
¼ t fresh ground pepper

Place all ingredients in small pan bring liquid to a boil and cook rapidly until liquid is reduced to about 2 Tablespoons.

Make Hollandaise by melting 1 stick butter in microwave until bubbling, but not brown.
Have in the blender jar…3 large egg yolks, 2T fresh lemon juice, pinch of cayenne, ¼ t salt.
Pour bubbling butter into blender jar slowly, with blender running, for about 30 seconds. Add shallot and tarragon mixture, and blend for about 10 seconds. Serve in gravy boat
