PEACH COBBLER

PASTRY:
2 C flour
½ t salt
1 C shortening
6 T ice water

FILLING:
½ C butter
8 ripe peaches, peeled and sliced
1 ¼ C water
1 ½ C sugar
2 T flour
Dash of cinnamon or nutmeg
Pinch of salt

Directions:
PASTRY: Combine first 3 ingredients with a pastry blender. Add ice water until dough holds together. Form dough into 2-1/2 balls. Wrap in wax paper and chill. Roll one large ball and line a 9X13 pan, making sure the pastry goes up the sides. Roll out the ½ ball and cut it into strips. Place strips on a cookie sheet and bake both the large pan and the strips at 450° for 10 min. or until golden brown and crisp.

FILLING: Mix first 3 ingredients in a saucepan and bring to a boil. Reserve a little sugar for the top, then blend remaining sugar, cinnamon and salt. Stir into the boiling mixture until dissolved. Place ½ of the peach mixture in the pastry lined pan; top with the cooked pastry strips. Add remaining peach mixture. Roll out the 3rd pastry ball and top the cobbler. Cut air vents in pastry. Sprinkle with reserved sugar. Bake at 375 for 35-40 min. or until golden brown.
