MEXICAN CORNBREAD



1 C cornmeal
1 C buttermilk
1/3 C bacon fat
1 t salt
1 small can cream style corn
½ lb grated cheddar cheese
2 cloves garlic, minced
1 small onion, grated
2 jalapeno peppers, minced (adjust to taste)
½ t baking soda
2 eggs

Directions:

Grease an 8X8 pan and place in preheated oven. Combine all the above ingredients and pour into hot prepared pan. Bake at 375° for 35 min.
