Mom's Hot and Sour soup Recipe

4 cups chicken stock
one can bamboo shoots sliced into sticks
2 T red wine Vinegar
3 T rice vinegar not seasoned
2 T soy sauce
1 Cup pork loin or chop sliced thin into sticks (I use left overs)
1 egg
1 tsp chili oil
1 tsp veg oil
1/2 package mushrooms sliced then cut in half Crimini or regular
(you can add dried Chinese mushrooms, soaked for 30 min in hot water)
3 green onions thinly sliced
1 T cornstarch mixed with 1 T cold water
salt
white pepper
1 T sriracha sauce

Directions:
Directions:
Put chili oil and 1 tsp of regular oil in pot and heat.
Add mushrooms and cook well
Add broth heat to boiling.
Add meat if raw, if not then add meat and bamboo shoots. Cook for 5 minutes.
Whip egg and have ready
Add onions and the vinegar and soy sauce. Cook another few minutes.
Add cornstarch mixture, salt and white pepper and sriracha. Heat to thicken a bit.
Take off heat and whisk in the egg and serve right away.

Feel free to add tofu, and other vegetables that you like in soup. This is a bit spicy so feel free to use less chili oil, white pepper, and sriracha but you do want it to be a bit hot.
