12 ounces dry small tube-shaped pasta such as penne, mostaccioli or ziti
2 Tbsp. olive oil
1 small shallot, chopped
4 small pear-shaped tomatoes (Roma-type), about 6 oz. total, seeded and chopped
2/3 cup whipping cream
Pinch of nutmeg
2 Tbsp. chopped fresh dill or 1/2 tsp. dry dill weed
1/3 cup vodka
4 - 6 ozs. sliced smoked salmon or lox, cut into bite-size pieces
Ground white pepper
Fresh dill sprigs

To prepare sauce: ( I do this a couple hours ahead of time to allow flavours to meld)

Heat oil in a wide frying pan over medium-low heat. Add shallot and cook, stirring often, until soft but not brown (about 3 minutes). Stir in chopped tomatoes, cover and simmer for 5 minutes. Add cream, nuts,e.g., chopped dill, and vodka. Increase heat to high and bring to full boil; boil for 1 minute.

Cook pasta according to package directions until al dente. Drain, reserving some of the pasta water to bring sauce to desired consistency.

Add pasta to sauce and mix lightly, using 2 spoons, until pasta is well coated. Add pasta water if you want to think sauce. Remove from heat, add salmon, and mix lightly. Season to taste with white pepper and garnish with dill sprigs.

To serve 8 adult portions, increase pasta to 16 oz. and make 1 1/2 recipes of the sauce. Increase salmon to 8 ozs.
