8 oz. white or brown rice*
3-4 cups chicken broth
1/4 cup Mexican saffron or Achiote
1/4 cup cilantro, chopped
1/4 - 1/2 cup green onion, chopped

*You can use rice in boiling bags or instant rice if you are in a hurry.

Directions:
Directions:
Prepare rice according to directions on package, except use chicken broth instead of water. Add saffron or Achiote. Cook as directed using stovetop or microwave options. Put into serving bowl and sprinkle cilantro and green onions on top and serve.

Hint: You can put this in a ring mold and bake it until set at 250º. Remove and invert onto serving dish. Garnish with cooked peas in the middle.
