2 cups self-rising flour, pinch of salt, BIG pinch of cinnamon, 1/2 cup butter at room temperature, 4 cooking apples, 1/2 cup of superfine (caster) sugar, 2 eggs beaten, a little milk to mix, granulated sugar to sprinkle over

Directions:
Preheat oven to 375. Mix the flour, salt and cinnamon in a bowl. Cut in the butter and rub in (using your hands), until the mixture is like fine breadcrumbs. Peel and core apples. Slice thinly (bite-sized) into the flour/butter mixture. Add sugar. Mix in the beaten eggs and the milk to make a fairly stiff dough. Turn the mixture into a prepared baking tin (buttered, whatever). Sprinkle with granulated sugar..Cook for 25-40 minutes until springy to the touch.

This makes a great breakfast or brunch treat, great with tea or coffee. It is not that sweet. This is a versatile cake. It can be served cold or warmed up. For a dessert, serve with chilled cream or custard over the crunchy top. Yum.
