1 cup raisins
1/3 cup brandy
3 cups all-purpose flour
1/2 teaspoon slat
1 stick 94 ounces) cold unsalted butter, cut into small pieces, plus 4 tablespoons unsalted butter, melted
1/2 cup vegetable shortening
1/4 cup plus 2 tablespoons ice water
2 tablespoons fresh lemon juice
2 1/2 pounds Golden Delicious apples (6 or 7 medium)
1 egg, beaten lightly with 1 teaspoon water to make a glaze
1 tablespoon sugar

In a small saucepan, combine the raisins and brandy. Cook over low heat, stirring, until warmed through, about 1 minute. Transfer to a small bowl. Cover and set aside, stirring occasionally, for 2 hours or overnight.
