10 unpeeled Red Potatoes
5 hard boiled Eggs rough chopped
3/4 c Sour Cream
3/4 c Mayonnaise
1 tbsp Apple Cider Vinegar or Dill Pickle Juice
1 tbsp Dijon Mustard
1/2 White Onion finely chopped
1 stalk Celery finely chipped
1 tsp Celery Salt
Salt & Black Pepper to taste
Optional( Dried Dill Weed) to taste

1. Place Potatoes in a large pot, cover with water, bring to a boil over high heat. Reduce heat to medium-low and simmer until potatoes are cooked but still firm, about 20 minutes. Remove from water, let cool, cut into chunks, sit aside.
2. In bowl, stir together Sour Cream, Mayonnaise, Apple Cider Vinegar (or Dill Pickle Juice), Dijon Mustard, Onion, Celery, Celery Salt, Salt & Pepper until well mixed.
3. Place potatoes and Eggs in a large bowl, pour dressing over the potatoes and eggs, and lightly mix together. Cover and refrigerate at least 30 minutes. Serve Cold.
