1 lb. Cod, or other fish you like
3 oz. Ritz crackers, crushed into crumbs
4 tbsp. Butter, melted
Sauce:
2tbsp. Butter, melted
2 tbsp. Lemon juice
1/4 cup white wine

Directions:
Directions:
Mix sauce ingredients and set aside. Roll and coat fish in bread crumbs, don't use any butter in this step. Bake fish in 400º oven for 4 minutes. Remove from oven and dip fish in melted butter and roll in cracker crumbs a 2nd time. Place fish back in baking dish, pour sauce over, and bake another 8 - 9 minutes until fish flakes with fork. Place under broiler for 30 - 60 seconds until golden on top.
