Vegetable Mixture
6 tsp.salt
4 med, onions 1 cup water
8 lg. cloves garlic, minced 1 can tomato sauce
14 rounded tbsp.. chili powder 1 tsp black pepper
1 can Ro-Tel tomatoes 1 tsp, red pepper
4tbsp cumin

Mix in a food processor divide mixture in half
Meat Mixture
3lb. ground chuck 1cup white corn meal
1lb. ground pork

mix the meat well then pour in vegetable mixture and mix well. Let the mixture sit for 15 minutes or overnight in refrigerator

Dry Mixture
7cups white corn meal 1tsp. red pepper
4 tsp salt tamale paper
1tsp. cumin

Mix together corn meal, salt, cumin and red pepper, Drop a well rounded tbsp. of meat mixture into corn meal. Roll lightly to shape like a tootsie roll. Cornmeal will stick to meat. Place roll on a wet tamale paper and roll securely. Stack tamales in large pan.

Steam Mixture

8 oz. can tomato sauce 1 tsp. black pepper
6 tbsp. chili powder 1 tsp. red pepper
1 can Ro-Tel tomatoes 2 tbsp. cumin
5 tbsp., salt

Place all steam mixture ingredients in a blender and blend well, pour over the tamales, and add enough water to cover tamales. After 30 minutes check water and refill pot with enough water to cover tamales at all times. Simmer on medium heat for approximately 1 1/2 to 2 hours. The time will vary by how many tamales are in the pot.
