3/4 cup brown sugar
3/4 cup white sugar
1 cup cooking oil (olive, canola, etc.)
4 eggs
1 tsp salt
2 tsp. cinnamon
2 cups flour (all, purpose, or whole wheat pastry flour)
2 cups grated carrots
2 tsp. baking powder
1/2 cup chopped nuts (pecans or walnuts)
16 oz. crushed pineapple, drained
1 1/2 tsp. baking soda

CREAM CHEESE FROSTING
1 box (4 cups) powdered sugar
1 cup butter
1 8 oz. pkg. cream cheese
2 tsp. vanilla

Directions:
Directions:
Mix first 6 ingredients well. Add the remainder ingredients. Mix. Bake at 350ºF.
in a greased 9" X 13" pan, until a toothpick inserted in center comes out clean.
About 50 minutes.

Whip together ingredients for frosting with electric mixer until fluffy. Frost cake
with cream cheese frosting when cool.
