2lbs. russet potatoes
1/2 cup onion chopped
1/2 cup celery chopped
3 tbsp. flour
tsp.salt
tsp. pepper
3 to 4 tbsp. butter

Directions:
peel and cut potatoes into large chunks toss potatoe and onions in with flour
mely butter in a soup pot add potato mixture to the pot stir to coat with butter and stir in enough water to cover potatoes you can also use chicken broth. bring mixture to a boil reduce to a simmer and cook uncovered for about 25 to 30 minutes or until potatoes are tender taste and adjust salt and peppercontinue cooking on simmer uncovered until the soup reaches desired consistency and thickness serve immediently
