6 fish fillets (mild white fish, tilapia is good)
6 tbsp. butter
3/4 cup orange juice
4-6 tbsp. chile powder (Santa Cruz)
2 tbsp. flour
salt to taste
1 orange, thinly sliced

Directions:
Directions:
Dredge fish in chile, make sure each fillet is coated on both sided. In skillet, heat 4 tablespoons of butter on medium high heat. Fry fish, 2 -3 minutes on each side. Remove fish and set aside, keep warm. Add remaining 2 tablespoons butter to pan, add flour to make a roux (paste). Add orange juice a little at a time and continue to stir. This will make a nice medium sauce. Place fish on a platter and pour the sauce over the fish. Place orange slicess over the fish and serve.
