1 cups butter softened
5 lg. eggs at room temp separated
1tsp. baking soda
2/3 cup finely chopped pecans
1tsp vanilla extract
3tbsp.light rum
2 cups sugar
2 1/2 cups. all purpose flour
3 1/2 oz. can sweetened flaked coconut
1/2 tsp cream of tartar

Preheat oven 350º lightly grease (3) 9" round cake pans and line bottom with greased parchment paper circles'
cream butter add sugar beat well on medium speed with electric mixer add egg yolk one at a time beating between each egg. Combine flour and baking soda in a small bowl add tocreamed mixture alternating with milk beginning and ending with flour mixture.stir in pecans coconut and vanilla.In a seperate bowl beat the egg whites on high until foamy add cream of tartar and beat until stiff peaks form. gently fold beaten egg whites into batter.
pour batter into pans and bake 25 to 30 minutes or until inserted toothpick comes out clean. cool cake in pans for 10 minutes remove from pans to cool on wire racks sprinkle eachlayer with 1tbsp rum and let stand 10 minutes before frosting with Ambrosia Frosting
