9” graham cracker pie crust (can buy premade)
14 oz can sweetened condensed milk (Eagle brand)
3 egg yolks
½ cup lime juice (Nellie & Joe’s brand is the best)
pinch of salt
Fresh lime, sliced thinly for garnish

Directions:
Directions:
• Preheat oven to 350º
• Combine milk, egg yolks and lime juice.
• Blend until smooth
• Pour filling into pie crust and bake at 350 for 15 min
• Allow to stand/cool/set for 10 min before refrigerating
• Just before serving, top with freshly whipped cream, or use left over egg whites to make meringue (see crème pie filling recipe for instructions)

Key Lime Pie is a family favorite ever since we lived in Florida. Jim just HAD to figure out how to make it and that he did adapting a recipe from Nellie & Joe’s Key Lime Juice.
