Ingredients: 4 eggs 1 1/3 cup sugar 3 Tbsp milk 2/3 cup melted butter Pinch of salt ¼ tsp vanilla 1 – large uncooked pie crust (I use Pillsbury Pie Crust, its quick, easy and tastes wonderful!)

Chocolate Chess Pie
1 stick butter, very soft 1 ½ cup sugar 3 ½ Tbsp cocoa (sifted with sugar) 2 eggs, added one at a time 1 small can Pet (evaporated) milk 1 Tbsp vanilla
Lemon Chess Pie
2 cups sugar 1 Tbsp flour 1 Tbsp cornmeal 4 eggs ¼ cup melted butter ¼ cup milk 2 – 4 Tbsp grated lemon rind ¼ cup lemon juice

Directions: |
Directions:• Preheat oven to 350º • In a large bowl, beat eggs with milk. • Add sugar and stir to somewhat melt sugar. • Add melted butter, salt and vanilla and mix. • Pour into a deep dish pie plate with uncooked pie pastry. Bake at 350 for 35-45 min until thickened and top is golden brown.
Variations in flavor…..
Chocolate Chess Pie - • Beat all ingredients together well • Pour into small pie pastry • Bake at 350 for 45 min
Lemon Chess Pie - • Combine sugar, flour, and meal in large bowl. • Add remaining ingredients and beat on low until well mixed. • Pour into unbaked small pie pastry • Bake at 350 35-45 min until top is golden brown |

Notes: Wanda Davis Wilson made the best pies, especially the Chess and Lemon Chess pie at the holidays. The Chess pie became a family favorite in Wendi's house as well.
