Home made, longer version -
4 cups sugar
2 - 5 1/3 oz ea cans evaporated milk
1 cup butter
1 - 12oz package of semi sweet chocolate chips
1 - 7oz jar marshmallow cream
1 cup chopped walnuts (or pecans if you prefer)

Quick, microwave version -
1 – 12oz pkg semi-sweet chocolate chips (2 cups)
1 – 14oz can condensed milk
1 ½ cups chopped nuts (walnuts or pecans)
1 tsp vanilla extract

Longer method -
• On the stove, heat the milk on medium high, in a large, heavy saucepan (like a dutch oven) along with the sugar and butter to soft ball stage (when you put a drop of mixture into cool water and it makes a ball you can mush together) using a metal spoon to stir constantly to keep from scalding/burning on bottom. Once mixture starts to boil, you can turn heat to medium to prevent this as well. Takes about 12-15 minutes after boiling begins.
• Take off of heat and stir in remaining ingredients stirring until all chocolate has melted.
• Pour into a buttered 9x9x2 or 13x9x1 pan, depending on how thick you want the fudge pieces. (you can line pan with foil or wax paper instead)
• Smooth flat on the top, sprinkle nuts and press down if desired.
• Let cool to stiffen. If not thickening, you can put the pan into the fridge to harden.
• Cut into squares to serve.

Quick method -
• In large glass bowl, combine chips and milk. Microwave on high for 3 minutes.
• Stir until chips melt and mixture is smooth. May require another minute or two in microwave and another stir for this consistency (depends on power of your microwave).
• Stir in nuts and vanilla.
• Line a 8” square pan with foil or waxed paper.
• Pour fudge mixture into the pan and spread evenly.
• Chill until firm, about 2 hrs.
• Makes about 1 1/4lb fudge; 64 – 1” pieces.

** With either of these versions, you can add different ingredients on the top to give different flavors....miniature marshmallows, crushed peppermint candy, crushed Heath bar candy, etc.

Both versions taste great! Wanda Davis Wilson always made the longer version at the holidays. Wendi continued the tradition but made the quick version.
