3 cups sugar
¾ cups Karo corn syrup
1 cup water
2 egg whites
1 tsp vanilla
Some pecan halves

Directions:
Directions:
• Add first three ingredients to a large, heavy saucepan (like a dutch oven) and heat on the stove, on medium high, to the hard ball stage (when you put a drop of mixture into cool water and it makes a ball you can’t be squashed) using a metal spoon to stir constantly to keep from burning on bottom.
• In a different, large, glass bowl…..whip the egg whites with mixer to form soft peaks (usually start at low and work up to high) being careful not to over mix so the peaks won’t collapse.
• Slowly pour the candy mixture into the egg mixture while you are still beating it at medium speed.
• Once all poured in, mix in the vanilla as well.
• Drop by spoonful onto wax paper and press a pecan half into the top. Candy will harden a little on the outside while staying fluffy on the inside.
• Keeps for several weeks in a sealed container or zip lock bag.
