5 cups sugar
1 ½ cup milk
1 lb chopped dates (about 1 ½ cups)
¼ block of butter ( 1 stick)
2 cups chopped pecans
Pinch of salt
1 tsp vanilla extract

Directions:
Directions:
• On the stove, heat the milk on medium high, in a large, heavy saucepan (like a dutch oven) along with the sugar, dates, and salt to soft ball stage (when you put a drop of mixture into cool water and it makes a ball you can mush together) using a metal spoon to stir constantly to keep from scalding/burning on bottom. Once mixture starts to boil, you can turn heat lower to prevent this as well. (This will take at least 15-20 minutes)
• Remove from heat, add butter and vanilla, mix well with metal spoon.
• Let sit and cool about 10-15 minutes.
• Using a hand mixer, beat mixture until it becomes stiff.
• Add the pecans and mix (switch back to metal spoon)
• Take a cheese cloth or clean, thin dish towel, or wax paper and lay out flat. Pour the mixture out on this and roll up to have a log shape. Put in fridge to chill at least 30 min or so…until stiff.
• To serve, unroll and slice.
• This will keep well in a sealed container, for a couple of weeks.
