1/4 cup butter
1/2 cup all purpose flour
1/8 teaspoon salt
dash cayenne pepper
1 egg slightly beaten
1/2 cup hot milk
3 cups finely grated swiss cheese
1/2 cup all purpose flour
malted shortening for deep fat frying
1 cup bread crumbs.

melt butter in sauce pan. Add flour, salt and cayenne. blend well. cook over low heat (2-3 min
) stirring constantly. remove from heat. add egg and beat with a wire whisk for several minutes until well blended. add hot milk slowly continuing to beat with whisk until mixture is smooth and creamy. Add cheese and beat to combine thoroughly. chill overnight or several hours, until firm.
Using a tablespoon shape little balls (about 1/2 oz each) roll lightly in flour. combine egg milk and slat to make egg dip. Dip the floured cheese balls into the egg dip and drain. Roll in bread crumbs, chill until ready to cook. fry in deep fat at 350 for 2-3 min. drain serve hot.
