Ingredients:  
1 tbsp. butter
1/2 c. chopped onion
1/2 c. chopped green pepper
1 minced garlic clove
1 14.5-oz. can diced tomatoes
1/2 tsp. chili powder
2 tbsps. flour
1 c. milk
1/4 tsp. salt
1/4 tsp. pepper
8 hard cooked sliced eggs
1/2 c. shredded cheddar cheese
1/2 c. soft breadcrumbs

Directions:
Directions:
Cook in 1 tbsp. butter, onion, pepper and garlic till tender. Add tomatoes and chili powder and cook 8 minutes. In another pan melt 2 tbsps. butter., stir in 2 tbsps. flour, then milk, salt and pepper. Cook until thickened and add to tomato mixture. Layer 1/2 of eggs in bottom of slightly greased 8" dish. Top with 1/2 of tomato mixture. Repeat. Sprinkle with cheese and breadcrumbs mixed with 1 tbsp. butter. Bake at 350º for 15 minutes. Let stand 5 minutes before serving.
