4 oz Blue stilton cheese crumbled
3 oz butter, softened
4 chicken breast fillets
8 rashers of smoked back bacon
1 tbsp oil
1 oz butter
1 glass of red wine made up to 1/2 pint with chicken stock
salt and pepper to taste
1 tsp cornstartch
parsley or thyme sprigs

Directions:

Put cheese and softened butter in a bowl and beat to a smooth paste.

Beat breasts (chicken not mine) between damp grease proof paper until thin. Spread paste on chicken breasts.

Roll up chicken and wrap in bacon. Toothpick them.

Heat oil and butter and brown chicken well. Add red wine, stock, seasoning, and bring to a blil. cover 35-40 minutes or until tender, turn occasionally.

Remove chicken, remove toothpicks and keep warm.

Blend cornstarch with a little water until smooth and add to juices. Stir until thick, season and spoon over chicken. Garnish with the greens.
