3 tbs flour
1/2 tsp salt
1/4 tsp pepper
4 skinless boneless chicken breasts (1 lb total)
tbs olive oil
1 tbs butter
1 c chicken broth
3 tbs lemon juice
1/2 tsp thyme
2 tbs chopped parsley

Directions:
Directions:
1. In a plastic bag, combine the flour, salt, pepper; shake to mix
2. Add the chicken and shake to coat lightly.
3. Remove the chicken and reserve the excess seasoned flour
4. In large skillet, wam 1 tbs oil over medium heat (I mix olive oil and butter). Brown on one side, about 5 min. Add remaining oil; turn the chicken, brown well on the second side, about 5 minutes. Transfer chicken to plate and set aside.
6. Coarsely chop onion; add butter. When the butter melts, add onion and cook, stirring, until softened, 2 - 3 min
7. Stir in the reserved flower, stirring until the flour is completely incorporated, about 1 minute
8. Add broth, 2 tbs lemon juice, and the thyme. Bring mixture to a boil, stirring constantly.
9. Return the chicken to the skillet; reduce heat to medium-low; cover. Cook until chicken is opaque and tender throughout, about 5 minutes.
10. Remove chicken to serving plate; stir in the remaining 1 tbs lemon juice.
11. Pour sauce over the chicken; top with parsley. Serve with rice or noodles.

This is quick and easy to prepare. I let the chicken cook until dinner is served -- doesn't hurt to heat it longer.
