•2 cups old-fashioned rolled oats
•1 cup whole-wheat flour
•½ cup shredded coconut
•1 teaspoon baking soda
•1 teaspoon baking powder
•½ teaspoon salt
•¾ cup (1 ½ sticks) butter, room temperature
•1 cup packed brown sugar
•1 egg
•¼ cup water
•½ cup frozen blackberries
•½ cup frozen raspberries

Preheat oven to 350 degrees. Coat an 8-inch square baking pan with vegetable oil spray.

In a large bowl, mix together oats, flour, coconut, baking soda, baking powder and salt.

In bowl of a stand mixer, cream butter and brown sugar. Add egg and ¼ cup water and mix until combined. Pour wet ingredients into dry ingredients and mix until just combined.

Place batter in pan, leaving ½ cup reserved batter in bowl. Press frozen berries on top and dot with remaining batter. Bake in preheated oven 40 minutes, or until top is golden brown. Let pan cool on a wire rack before cutting and enjoying.
