1 3/4 cups Flour
½ tsp baking soda
1 ¼ tsp baking powder
2/3 cup sugar
1/3 cup softened butter
2 eggs
2 Tbsp milk
1 tsp vanilla
1 cup mashed, ripe bananas (about 2)

**optional 1/2 cup chopped pecans or chocolate chips

• Preheat oven 350º
• Combine flour, baking soda & powder in a bowl, sift together (or stir with a whisk), set aside.
• Beat sugar and butter in another, larger bowl, on low, until blended and creamed.
• Add eggs, one at a time, to the creamed sugar mixture, beating in between.
• Add milk and vanilla and mix.
• Add part of the bananas and part of the flour mixture to the creamed mixture, mixing with a large spoon. Repeat until all is well mixed being sure to scrape the sides and bottom of bowl to mix in all of the flour.
• Pour the batter into a well greased 9x5 bread/loaf pan, bake for 60-65 minutes (until toothpick comes out clean).
• Take out of oven and let sit for 10 min, in the pan, on a wire rack. Then, turn loaf out onto the wire rack and let cool a bit longer before slicing.
