French Omelet (Judy) Recipe

4 eggs
4 Tblsp. milk
1/4 tsp. salt
Dash of pepper
1 Tblsp. butter

Diced slightly sauteed vegetables, sauteed onions and or mushrooms in butter, cooked diced meat of your choice.

Directions:
Beat eggs until light and fluffy. Add milk, salt and pepper. Heat 1 1/2 tsp. butter in each section of and omelet pan. Place equal amount of egg mixture in each section of pan. Cook slowly over low heat. When underside surface is set, lift omelet slightly with a spatula to let the uncooked portion flow underneath, and cook. As soon as the mixture is set, add your vegetables , meats, cheese or whatever and fold the omeletes together by flipping one side over. Cook and additional 2 minutes. (I always put cheese on top and then cook the additional 2 minutes.

My small omelete pan serves just 2 or 3. I'm not sure if there are other larger pans out there, but if so, ingredients would need to be adjusted.
