1 lb. spaghetti
4 strips bacon, chopped*
1 large red onion, finely chopped
1 container (15 oz.) part-skim ricotta cheese
4 large eggs
2 c. reduced-fat (2%) milk
1/4 tsp. cayenne (ground red) pepper
1 c. freshly grated Parmesan cheese
Salt
2 c. frozen peas

* omit to make dish vegetarian

Directions:
Directions:
Cook spaghetti according to directions on box. Cook bacon. Cook onion in butter or bacon fat until tender. In a large bowl whisk ricotta, eggs, milk, cayenne, half of Parmesan, and 1/4 tsp salt. Stir into ricotta mixture drained cooked spaghetti, peas, bacon, and onion. Spread in even layer in 3-quart shallow baking dish. Sprinkle remaining Parmesan on top. Bake at 350º for 30 to 35 minutes or until set.
