2 1/2 lbs. cauliflower florets (about one large head)
1 tbsp. olive oil
salt
black pepper






For cheese sauce:
2 tbsp. unsalted butter
2 tbsp. flour
1 c. milk (warmed)
1/4 tsp. salt
1/8 tsp. black pepper
1/4 tsp. dry mustard
1/2 c. shredded sharp cheddar

1/2 c. Panko breadcrumbs

Directions:
Directions:
Preheat oven to 425º. Toss cauliflower florets in olive oil with salt and pepper in lay in a singe layer on baking sheet. Roast for 45 minutes stirring every 15 minutes.

While cauliflower is roasting in a medium saucepan slowly melt butter. Add flour, salt, and pepper, and mustard. Stir constantly, about 3 minutes. Add hot milk and stir vigorously while bringing to a boil. Remove from heat and add cheese. Stir until melted.

Place roasted cauliflower in 8x8 baking dish. Pour cheese sauce on cauliflower. Sprinkle with Panko bread crumbs. Bake for 20 - 30 minutes.
