4 lbs. rolled, boneless pork roast
20 whole cloves, enough to stud the entire roast
2 tsp. nutmeg
4 tbsp. olive oil
1 large onion, chopped
3 clove garlic, chopped
3 bananas'
1 cup orange juice
1 cup white wine
1/2 cup ancho chile paste or Santa Cruz plus 2 tsp. hot chile powder
2 jalapenos, minced (optional)

Stud the roast with the whole cloves (push cloves all over the roast). Salt and pepper roast as desired. Sprinkile with nutmeg and place into dutch oven, set aside. In a sauce pan brown onion and garlic in oil. In a blender put bananas and orange juic and blen. Add chile paste and wine and blend thoroughly. Add mixture to sauce pan and bring to a boil and simmer for 5 minutes. Pour over roast. Cover and bake at 350º for 2.5 - 3 hours. Remove from oven and take all the cloves off the roast. Slice roast in rounds and place on platter. Pour sauce around meat. Serve remaining sauce in a gravy boat.

Tip: To remove pork grease from sauce, use one of these three methods:
1. Place a paper towel over the grease, until absorbed. Remove paper towel & discard.
2. Skim grease off with large spoon.
3. Chill sauce until grease is solid and remove with spoon
