4 pork chops. 3/4 inch thick
2 tbsp. olive oil
4 medium onions, sliced
8 limes, thinly sliced
1 cup chile paste, Santa Cruz, ancho, or pasilla
1 cup brown sugar, firmly packed
1 cup Kalua or Tia Maria
2 tsp. nutmeg
2 tsp.basil
2 tsp.oregano
2 tsp.thyme
1 tsp. salt & pepper

Directions:
In large skillet, heat olive oil and brown pork chops. Remove pork chops and place in a shallow, baking dish. In a medium bowl, mis brown sugar, chile paste, Kalua, nutmeg, basil, oregano, and thyme and mix throughly. Salt and pepper pork chops and pour one cup sauce over the chops. Spread onions and limes on top of the pork chops. Pour remaining sauce over the dish. Cover with foil and bake at 350º for 45 minutes to one hour. Uncover for the last 15-20 minutes.

A very unusual dish that probably came from the state of Jalisco. Limes are the hallmark of their cooking. The use of lime is simply spectacular!
