4 lb. chicken, cut into pieced or all breasts
1/4-1/2 cup cinnamon
2 cups white wine
1 jar (16 oz.) chile paste
1/2 cup fresh basil or terragon, minced

Directions:
Wash chicken thoroughly and plack in large Ziplock bag. Add cinnamon, seal bag and shake until chicken is coated. Mix win and chile paste together, set aside. In large casserole dish, place chicken in bottom. Pour chile paste mixture over chicken and sprinkle basil/tarragon over chicken. Cover with lid or foil. Bake at 350º for one hour.

This was my friend, Jim Vanstory's favorite dish. I hope you enjoy it as well. This may be made ahead of time. Refrigerate over night and bake it.
