Ingredients:  
1/2 c peppered bacon, diced and cooked
1 tbsp olive oil
1 onion, diced
2 cloves garlic, chopped
1/4 c flour
1 1/4 c dry white wine
1 qt chicken stock
4 potatoes, diced
1 tsp thyme
1 tsp basil
1 tsp marjoram
salt and pepper to taste
2 c heavy cream
6 oz smoked salmon**
1 c grated cheese

Directions:
Directions:
Saute garlic and onion in olive oil. Dust flour over mixture and blend. Add wine and stock, stir. Add potatoes and cream, simmer 1 hour. Add seasonings and simmer 30min more. Add salmon and Bacon during last 5min of cooking. Sprinkle cheese over top as served.

**can substitute clams, corn, other seafood, bacon, etc.
