Ingredients:

2 Cups Raisins
2 Cups Sugar (1 white, 1 brown)
2 Cups Water
5 heaping TBsp of shortening
1 cup of dates finely chopped
5 tsp of cinnamon, yes, that's 5 and not a typo.
Boil the above ingredients for 5 minutes and set aside to cool. After cooled, add:

1 tsp.Vanilla
3 cups of Flour
5 eggs
1 tsp baking soda
1 cup of finely chopped nuts if desired.
3 tsp baking powder
3/4 cup milk

Directions:

Preheat oven to 350º
Mix all above ingredients and pour into a greased and floured angel food cake pan.
Bake 45 minutes at 350º, then an additional 30 minutes at 325º. It may require an additional15 minutes baking or a little more than 1.25 hours; check with a toothpick. When the toothpick comes out clean it is done baking.

Cool completely, then frost with a white glaze and decorate with nuts and a few red and green cherries on top for the Christmas Holiday.

Christmas was never complete without Mom's special homemade fruit cake made fresh for Christmas Eve dinner after mass. It was always beautifully baked, prepared on a glass cake platter with her silver cake cover and served for dessert on Christmas Eve right up to and including her last Christmas spent with us in 2013. She always skipped the candied fruit as that is not a family favorite.
