MEXICAN LIME RICE

PERFECT RICE
Just double the water of how much rice you use,
1 cup rice 2 cups water for 2 servings
Add ½ t salt for each cup rice
Cover and bring to a boil
Do not take the lid off during the whole cooking time
Turn to very low heat and simmer 20 minutes
Remove from heat and let it sit, with the lid on for 5 minutes
Remove lid and Add 1 T lime zest
2 T lime juice
1 t ground Cumin
chopped cilantro and green onion
Stir into and fluff the rice.


MEXICAN BLACK BEANS
1 can of canned black beans
1 t cumin
2 cloves garlic minced
2 T chopped green onion
½ t dried oregano (optional)
chopped jalapeno pepper halved and seeded (optional)

Combine the bean ingredients and simmer for 5 minutes
Cover the bottom of a flat serving bowl with the lime rice
Layer the black beans on top of the rice
Top with shredded cheese, chopped green onions and fresh cilantro
Serve with sour cream and salsa and tortilla chips
