1 box Chocolate Cake Mix (plus ingredients called for in the directions)
1 (3.9 oz.) box instant Chocolate Pudding
1/8 tsp. Kosher Salt
3/4 c. Sugar (plus 1 tbsp. Sugar (divided use))
3 Large Eggs
1 tsp. Canola Oil (to prepare the pan)
14. oz. Mascarpone (divided use)
28 oz. Ricotta Cheese
1 C. Whole Milk

Directions:
Preheat oven according to the cake mix directions
Coat a 9 x 13" pan with oil
Cake: Prepare the batter according to directions; pour into prepared pan
Filling:
Combine the ricotta, 4 oz. (1/2 c.) mascarpone, eggs, (3/4 c.) sugar and salt in the bowl of a stand mixer and whisk until smooth
Pour the filling onto the cake mixture so the top is completely white
Bake until a skewer comes out clean and the chocolate layer has risen to the top - about 40 minutes
Cool Completely.
Frosting: before serving, blend the (10 oz. or 1 1/4 c.) mascarpone, milk, chocolate pudding mix and 1 tbsp. sugar in the bowl of a stand mixture until smooth
Use an offset spatula and spread the frosting evenly over the cake
Keep refrigerated
