1 lb. ground beef
1 onion, diced
3 stalks celery, diced
1 clove garlic, minced
2 or 3 cans (14.5 oz.) kidney beans
1 or 2 cans (14.2 oz.) stewed or diced tomatoes
1 to 2 T. chili powder
Crushed chili peppers according to your taste

Brown ground beef in Dutch oven and drain. Add onion and celery, and continue cooking until they are translucent. Turn temperature down and add garlic, being careful not to burn. Add all remaining ingredients. This is made according to your taste. Some folks like more kidney beans, some like more tomatoes, some omit the chili peppers. Allow to simmer, covered, for several hours. Serve with a salad and cornbread or rolls.
