Crust:
18 graham crackers crushed
1/4 Cup Sugar
1/4 Cup melted butter
press together in pan
(Save 1/4 cup for topping)

Cream Cheese Filling:
18 ounce bar cream cheese
1/2 Cup Sugar
2 Eggs
beat together and pour over crust
Bake for 20 minutes at 350 degrees

Pumpkin Filling:
(This is mixed on stove top and warmed together.)
1 1/2 Cups cooked pumpkin
3 egg yolks beaten (save the whites for later)
1/3 Cup Sugar
1 Tsp. Cinnamon
1/2 Tsp. Salt

1 package of knox gelatin

Directions:
While the pumpkin mixture is still warm on the stove top add 1 package of knox gelatin with 1/4 cup warm water and pour together in pumpkin while it's still hot. Then, let the mixture cool until luke warm. Then, add beaten egg whites with 1/4 Cup Powder Sugar and fold in pumpkin. Let Cool. When cold, cover with Whipped cream and sprinkle remaining graham cracker crumb mixture on top.
