1/2 cup Zucchini
1/2 cup Mushrooms, sliced
1/3 cup Onion, chopped
2 tsp. Oil
1 Tbsp. Fresh Parsley, minced
3/4 tsp. Fresh Basil, minced
3 cups bread crumbs
1/2 cup Mozzarella Cheese, shredded
2 Eggs
1/2 cup Milk
1/4 tsp. Salt
1/8 tsp. Pepper
2 Plum Tomatoes, chopped

Directions:
Directions:
In a small skillet, saute zucchini, mushrooms and onion in oil until tender. Stir in parsley and basil. In a 8 x 4 inch loaf pan coated with cooking spray layer half of the bread cubes and mozzarella cheese. Top with the vegetables and remaining bread. In a small bowl, whisk the eggs, milk, salt and pepper. Pour over the bread. Sprinkle with the tomatoes and remaining cheese. Cover and bake at 350 degrees for 20 minutes. Uncover and bake 10-15 minutes longer or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.
