1 preheated 12 inch thin pizza shell
1/2 c. chopped oil-packed sun-dried tomatoes +1 Tbsp. of the oil, divided
1 small red onion, thinly sliced
1 tsp. olive oil
2 garlic cloves, minced
1 tsp. dried rosemary, crushed
1/4tsp.pepper
2cups fresh baby spinach, chopped
1 1/4 c. feta cheese
1/4c. Greek olives, pitted and chopped
4 slices part-skim mozzarella cheese
grated lemon peel, optional

Directions:
Directions:
Place crust on an ungreased 12 in pan, brush with oil from tomatoes, set aside.
Saute onion in oil until tender, add garlic cloves, cook 1 min. Remove from the heat, stir in rosemary, pepper and lemon peel. Spread over crust, top with spinach and tomatoes.
Sprinkle with Feta cheese, top with mozzarella.
Bake 425 for 10-12 min. Let stand 10 min before cutting.
