1 lb. ground beef or 1 lb. sliced cooked beef
1 lb. chorizo, beef or pork
1 large onion, chopped
1 tbsp. chile powder
4 cloves garlic, minced
4 cups fresh salsa verde or 2 (14 oz.jars Verde salsa by Herdez)
1 1/2 lbs. Guda cheese, grated
1 tsp. salt
24 corn tortillas

Brown chorizo and ground beef together in large frying pan on medium high heat. When meat is brown, push to one side and add onions and garlic and cook until onion is tender. Drain excell oil and add chile powder and salt. Pour in 2 cups salsa and cook for 10 minutes. Heat tortillas one at a time on an eletric burner and put 2 - 3 tablespoons meat mixture on the tortilla. Sprinkle cheese onto mixture and roll up tortilla. Place enchiladas in a 13 x 9 baking dish with 1/2 cup sauce in the bottom. Fill pan and cover with remain sauce and cheese. Bake uncovered at 350º for 30 minutes. Garnish down the center with 2 chopped tomatoes, 1/2 cup sliced black olives, 8 - 10 chopped green onions.

This is an excellent recipe with a wonderful flavor. This enchilada dish is very "Gring" and very good!
