24 corn tortillas
4 cups cook chicken, shredded (you can use left over rotisserie chicken)
1 cup green chile, chopped
1/2 cup black olives, sliced
4 cups red enchilada sauce (Colorado in sauce section)
2 cups Jack or Munster cheese, grated

Directions:
Directions:
Mix chicken, chiles, olives,m and 1/2 cup enchilada sauce together in a medium bowl. Soften tortillas one at a time on an electric burner. Fill tortillas with 3 tbls. chick mixture (add more cheese if desired). Roll up and place seam side down in a 13 x 9 baking pan. Cover bottom of pan with 1/2 cup sauce. Fill dish with enchiladas and top with remaining sauc. Top with cheese and bake at 350º for 30 - 45 minutes. Garnish with chopped green onions and sour cream.

In the United state enchiladas are the most popular Mexican dish served. This is a classic chicken chnchilada. This receipe is very large because they are great for leftovers or can be frozen. You can cut the recipe in 1/2 if desired.
