12 - 15 corn or flour tortillas
1 cup Gouda cheese, grated
1 cup Munster or Jack cheese, grated
1 cup Ricotta cheese
1 cup green chiles, peeled, seeded, and diced
3 cups Colorado enchilada sauce or tomato cream sauce
1 egg, beaten
1/2 tsp. salt
1 cup Jack cheese, grated (for topping)
Garnish:
1/2 cup green olives, sliced
1/2 cup black olives, sliced
1 avocado, cubed
1 tomato, cubed

Directions:
Directions:
In a large bowl mix ricotta, egg, salt, green chiles, and cheeses. Soften tortillas on electric grill or on stove burner. Place 2 - 3 tbsp. cheese mixture in each tortilla. Roll up and place seem side down in a 13 x 9 baking dish with 1/2 cup sauce in the bottom. Pour remaining sauce over the enchiladas and spread grated cheese over the top.
Bake at 350º for 20 - 30 minutes, until cheese is melted and sauce is hot. Remove from oven and plate. Add garnish as desired.

Tomato Cream Sauce:
2 cups tomato puree
2 cups sour cream
1/4 cup white wine sauce
1/2 cup Fresh basil, chopped
1 tsp. oregano
1 tbls. olive oil
salt & pepper to taste

Put olive oil and basil in sauce pan and coat basil completely in oil. Add wine, tomato puree, & sour cream. Cook on low for 10 minutes until all the flavors are blended. Be careful not to boil sauce.
