Dissolve yeast in lukewarm milk, add salt, vanilla, sugar, butter, egg yolks and three cups flour. Beat with mixer. Put in warm place until doubled; then add approximately 3 more cups flour, possibly more, and knead until smooth. Let raise again until doubled.
Filling:
In pan melt butter with sugar; pour slowly over nuts until absorbed; nuts should be moist, not wet. Add small amount of milk if nuts not moist enough. Beat egg whites until stiff and mix with nuts just before spreading on dough.
Roll out dough on confectionary sugar. Spread nut filling thickly over dough. Roll up, pinching seams to seal. Place on parchment paper placed over cookie sheet. Bake at 325 º until golden brown, about 30 to 40 minutes. Slice once cool.
