4 loaf everything bagels...
3 T butter...
1 medium sweet onion, chopped...
1 large leek, tops cut down and end cut off, split down the middle, washed well and chopped...
2 stalks of celery, washed, cut long ways and diced...can use leaves, too...
4 cloves of garlic, minced...
2 pounds of cleaned and cut in 1/2 inch pieces mixed wild mushrooms, can use white button mushrooms, however, the flavor in much better with an array of mushrooms...
4 sprigs of fresh thyme leaves, remove stems, just the small leaves...
2 sprigs of fresh rosemary,remove stems and chop the leaves...
2 fresh sage leaves chopped...
1 1/2 cups of chicken broth...
Salt and pepper...

Preheat oven to 350º...
Toast bagels, once toasted, cut into small chunks, set aside...
Melt butter in a Dutch oven, over medium heat...
Raise heat to medium-high and add onion, leek, celery and garlic, stir until lightly browned...
Add the bagel chunks, mushrooms and all herbs, stir to heat all ingredients through...
Add salt and pepper, stir and taste, if you need to add more salt/pepper, you can...
Once mushrooms are soft, transfer ingredients to a casserole dish...

I spray the casserole dish with Pam before transferring stuffing to dish...

Cover the stuffing with the chicken broth...
Mix well, bake for 35 minutes or until stuffing is a golden brown topping...
Cover with foil until ready to serve...
Enjoy!

If you feel that more chicken broth is needed you can add more...
Remember stuffing is to be moist, not dry or runny...
