Oil: Sesame Seed, Coconut, Grape Seed or Olive oil.
3 Large Eggs
Yellow Onion
Bell Peppers (any color), Jalapeno, Baby Carrots
Rice (Jasmine works best))
Soy Sauce
Fresh Shrimp (or any meat, even leftovers)

Heat 1T oil in large wok or frying pan
Whip 3 eggs in a bowl and brown both sides in oil until cooked.
(Set egg aside and slice in strips and add to fried rice at the end)
Add 2T oil to the pan and add diced carrots to hot oil
Quarter Jalapeņo(s) and remove seeds, slice thin lengthwise and add
Julienne onion and bell pepper and add to pan
Add cooked rice (this could be cold leftover or cooked prior)
Timing is important so as not to overcook the veggies or make mushy rice
Add soy sauce while browning the rice. Add egg strips
Shrimp cook quickly so add last and cook until pink. Enjoy

I always make extra rice and will use the leftovers to make fried rice.
If you cook the rice at the same time, under cook it and finish in the pan
Then I add whatever meat or veggies I have
You can make it a side dish or a main dish (or the complete meal)
