1 1/2 t crushed rosemary leaves
1 t minced garlic
1/2 tsp black pepper
1 tsp salt
2 T olive oil
6 boneless/skinless chicken thighs
1 1/2 lbs small red potatoes, cut into 1 inch cubes

Directions:
Directions:
1. Mix oil, all of the spices in large bowl. add chicken and potatoes; toss to coat well. Arrange chicken and potatoes in single layer on foil-lined baking pan sprayed with non-stick cooking spray.
2. Roast in preheated 425º oven for 30 minutes or until chicken is cooked through and potatoes are tender, turning potatoes occasionally.
